An essential component of today’s food regulations (more than 700 in the Federal Republic of Germany) is the food hygiene ordinance of 8th August, 2007. This ordinance regulates the handling and shipping of food, asking for necessary care, to prevent goods from adverse impacts. To meet these requirements the Hazard Analysis and Critical Control Point (HACCP) is used. This system helps to identify, assess and master hygienic threats. In accordance with Council Regulations (EC) 852/2004, food companies (producers, wholesale and retail, manufacturing industries, etc.) are asked to imply a constant procedure into their companies, which has to be carried out and maintained, based on the principles of the HACCP system.

One aspect of this procedure is giving evidence of an uninterrupted cooling chain. The measuring data monitoring conducted by FSZ brings forward this evidence and helps you to meet today’s regulations.
